Ingredients
- 2 medium zucchinis, grated
- 1 cup breadcrumbs
- 1/2 cup grated Parmesan cheese
- 2 cloves of garlic, minced
- 1/4 cup fresh parsley, chopped
- 1/4 cup fresh basil, chopped
- 1/3 cup all-purpose flour
- 2 eggs
- Salt and pepper to taste
- 1/4 cup olive oil
- 1 jar of your favorite tomato sauce
Instructions
- In a large bowl, combine the grated zucchinis, breadcrumbs, Parmesan cheese, minced garlic, chopped parsley, and basil. Mix well until all the ingredients are evenly incorporated.
- Add the flour, eggs, salt, and pepper to the mixture. Stir until everything is well combined and forms a sticky yet manageable dough.
- Using your hands, shape the dough into small balls, about the size of a golf ball. Place the balls on a baking sheet lined with parchment paper.
- In a large skillet, heat the olive oil over medium heat. Add the zucchini balls in batches, making sure not to overcrowd the pan. Cook for 4-5 minutes, or until golden brown on all sides.
- Once the zucchini balls are cooked, transfer them to a plate lined with paper towels to drain any excess oil.
- In a separate pot, heat the tomato sauce until warm. Add the zucchini balls to the sauce and let them simmer for a few minutes to soak up the flavors.
- Serve the zucchini balls hot, garnished with fresh basil or grated Parmesan cheese, alongside your favorite pasta or crusty bread.
